Brief Description of Position: Administrative position with responsibility for the Quality Assurance compliance in either the Hot or Cold Food Production departments compliance, maintenance & monitoring of our Global Quality Systems (GQS). Principal Responsibilities: Responsible for monitoring portion control and attending and participating chef tables. Assemble and maintain airline specification manuals Assist in all menu presentation and attend menu meetings Ensure Cooler Rotations and FIFO Complete and submit all Food Requisitions Print all cBase reports Train and coach Hot/Cold Food department personnel on Quality System and HACCP procedures Assist Hot/Cold Food Management Team in investigation and response to all alleged food-borne incidents Ensure departments HACCP program compliance by reviewing and analyzing daily HACCP logs and management checklists to determine consistent fulfillment of the required HACCP SOP Assist Hot/Cold Food Management team in the development of action plans to correct areas of non-compliance Collect and monitor all quality documentation, i.e., chef table, portion control, equipment handling, and food safety handling Issues Knives and insure compliance with Knife Policy Other administrative task as assigned by the department manager Principal Responsibilities: Responsible for monitoring portion control and attending and participating chef tables.
